About one hundred years after the divinely gifted composer Wolfgang Amadeus Mozart had lived and worked here, the master confectioner from Salzburg, Paul Fürst, began to form small balls of marzipan which he coated in a praline cream and speared on little wooden sticks. He then dipped these balls in warm, smooth chocolate until they were coated regularly with a chocolate layer all over. This was the birth of the Mozartkugel.
Originally the traditional Mirabell company also produced its Echte Salzburger Mozartkugel, as tradition demanded, in a manual process. However, in order to meet the increasing demand the manual manufacturing process was transformed into an industrial method. Nevertheless Echte Salzburger Mozartkugel are still made with the same love and attention to detail – fourteen working stages and a total manufacturing time of 2 ½ hours are necessary for each perfectly round delicacy.
Despite the desire to remain loyal to tradition the complicated manual process was not suitable for satisfying the huge increase in demand and so the Salzburg company transformed its original manual manufacturing process into an industrial method. Nevertheless 14 working stages and a manufacturing time of 2 ½ hours are still necessary for each perfectly round delicacy.
The Echte Salzburger Mozartkugel by Mirabell is more than just an exquisite delicacy. In comparison to all the other industrially manufactured products that take the name Mozartkugel it is unique. It is the only one to be completely round and is still produced in the spirit of the original recipe created by Paul Fürst in Salzburg, the city where Mozart was born. Furthermore it is synonymous with Austrian culture and tradition rather like the Lipizzans and Wiener Sängerknaben.
And of course it is a popular souvenir for anyone who wants to take a little piece of Austria back home.
