Whether that letter was ever written by field marshal Radetzky in which he told the Austrian emperor Franz Joseph about the Milanese veal cutlet coated with breadcrumbs no one knows for sure. Therefore the question whether the deep-fried breaded Wiener Schnitzel, which has been intimately tied to Austrian cuisine, was introduced by Radetzky as a copy of the Milanese schnitzel or not is still unsolved today.
Be it copied or not, for the
original Wiener Schnitzel veal is used, however it is most popular using pork meat. And despite concerns from nutritionists, Wiener Schnitzel tastes best when deep-fried in
lard - vegetable oil or clarified butter do as well. The bread crumbs for the coating are best when they are freshly ground from stale Kaiser rolls. Creative cooks also sometimes use crumbs from brown bread or some type of sesame bagel. As for the frying temperature, most people agree that medium heat is just fine.
Wiener Schnitzel – the original recipe:
Ingredients:
4 topside veal cutlets (approx. 150 g each)
1 tablespoon of oil
salt, freshly ground pepper
2 eggs
3 tablespoons of cream
50 g wheat flour
150 g roll breadcrumbs
250 g lard
Preparation:
Wash the cutlets under cold running water, dry with kitchen paper. Brush two pieces of plastic wrap with oil and place the meat in between. Beat the meat with a meat mallet until thin and flat. Take off the plastic wrap and season the veal with salt and pepper. Mix eggs and whipped cream in a bowl. Prepare two other bowls or soup plates, one with the flour, the second with the breadcrumbs. First dip the meat into the soup plate containing flour, next into the bowl of eggs and cream; finally into the soup plate with the breadcrumbs. Heat the lard in a large frying pan and fry the cutlets for 3 minutes on both sides until golden brown. While frying, shake the pan continually in order to make the breadcrumb coating rise. Remove the schnitzel from the pan and dry on kitchen paper in order to soak up excess oil. Garnish with lemon wedges and parsley. Traditionally, Wiener Schnitzel is served with potato salad.
